“Budae” means military base.

Budae Jjigae which can be translated as “army fondue” is a Korean dish dating from the end of the Korean war -1953-

Hungry Koreans scavenged American ingredients from their old bases: canned sausages, canned beans, and incorporated these ingredients into a traditional dish, “kimchi jjigae”.

The first versions of this dish were without kimchi and with few vegetables, they contained only the remains of the army.

Korean dishes are generally very healthy, unlike this dish which often uses industrial ingredients too salty, which makes budae jjigae a dish with a status of its own.

 

In case you were wondering, we have not become specialists in Korean gastronomy. It’s just that thanks to Kim Hyun Joong we are still learning something Korean every week.
